Firm-ripe bananas are sautéed in butter and brown sugar until soft and glazed with a deep caramel sheen. A splash of vanilla and a pinch of salt round out the sweetness, making this a quick finish for pancakes, waffles, oatmeal, or vanilla ice cream. The whole process takes less than ten minutes and uses just one skillet.
Ingredients
- 3 firm-ripe bananas, sliced into 1/2-inch rounds
- 3 tablespoons unsalted butter
- 1/3 cup brown sugar, packed
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1 tablespoon water
Method
-
Slice the bananas into 1/2-inch thick rounds.
-
Melt the butter in a 9-inch skillet over medium heat.
-
Stir in the brown sugar, cinnamon, and salt until the sugar dissolves and the mixture bubbles, about 1 minute.
-
Add the banana slices in a single layer and cook without stirring for 2 minutes to let the undersides caramelize.
-
Gently flip the banana slices and add the water, then cook 2 more minutes until the sauce thickens and coats the bananas.
-
Remove from heat and stir in the vanilla extract.
-
Spoon warm over pancakes, waffles, oatmeal, or ice cream immediately.
