  • 4 slices sourdough bread

  • 6 ounces Gruyère cheese, thinly sliced
  • 2 tablespoons unsalted butter, softened, for grilling

Method

  1. Melt 1 tablespoon butter in a 9-inch skillet over medium-low heat. Add the sliced onion, salt, and sugar, and cook, stirring occasionally, until softened.

  2. Reduce heat to low and continue cooking the onions, stirring occasionally and scraping the pan bottom, until deeply golden and jammy.

  3. Remove the onions from the skillet and set aside. Wipe out the skillet.

  4. Lay out the 4 slices of sourdough. Spread 1 tablespoon fig jam on each slice.

  5. Divide the caramelized onions between 2 of the bread slices, then top with the sliced Gruyère. Close each sandwich with the remaining bread slices, jam side down.

  6. Spread the softened butter evenly over the outside of both sandwiches.

  7. Place the sandwiches in the skillet over medium-low heat and cook until the bottoms are golden brown and crisp.

  8. Flip the sandwiches and cook until the second side is golden and the cheese has fully melted.

  9. Transfer to a cutting board, let rest briefly, then slice in half and serve warm.
