Bite-sized beef chunks are patted dry and seared in batches over high heat, then finished with a buttery, sweet-savory glaze that clings to every crusty edge. Serve them over rice or mashed potatoes, or on their own with toothpicks as a hearty appetizer.
Ingredients
- 2 pounds beef sirloin or chuck, cut into 1-inch cubes
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper, freshly ground
- 2 tablespoons vegetable oil
- 3 tablespoons unsalted butter
- 3 cloves garlic, minced
- 3 tablespoons brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon Worcestershire sauce
- 1 tablespoon fresh parsley, chopped, for garnish
Method
-
Pat the beef cubes dry with paper towels and season on all sides with salt and pepper.
-
Heat the vegetable oil in a 9-inch skillet over high heat until shimmering.
-
Add the beef in a single layer, working in batches to avoid crowding, and sear undisturbed for 2 minutes per side until deeply browned.
-
Transfer the seared beef to a plate and repeat with any remaining batches, adding more oil to the skillet if needed.
-
Reduce heat to medium and melt the butter in the same skillet, scraping up any browned bits from the bottom.
-
Add the garlic and cook, stirring constantly, until fragrant, about 30 seconds.
-
Stir in the brown sugar, soy sauce, and Worcestershire sauce, and simmer until slightly thickened and glossy, about 2 minutes.
-
Return the beef to the skillet and toss to coat evenly in the caramelized glaze, cooking for 1 to 2 minutes until warmed through.
-
Transfer to a serving dish, sprinkle with chopped parsley, and serve hot.
