This syrup blends honey and water with crushed cardamom pods for a warm, floral sweetness that works well drizzled over pancakes, stirred into tea, or added to cocktails. Simmering the pods releases their essential oils, giving the syrup a deep, aromatic flavor. It keeps well refrigerated, making it a handy pantry staple for sweetening drinks and desserts.

Ingredients

  • 1 cup honey
  • 1 cup water
  • 2 tablespoons green cardamom pods, lightly crushed
  • 1 teaspoon lemon zest
  • 1/8 teaspoon salt

Method

  1. Lightly crush the cardamom pods with the flat side of a knife or in a mortar and pestle to split the shells and expose the seeds.

  2. In a small saucepan, combine the honey, water, crushed cardamom pods, lemon zest, and salt.

  3. Bring the mixture to a gentle simmer over medium heat, stirring occasionally to dissolve the honey.

  4. Reduce the heat to low and simmer gently, uncovered, until the syrup is fragrant and slightly thickened.

  5. Remove the saucepan from the heat and let the syrup steep with the cardamom pods for 15 minutes to deepen the flavor.

  6. Strain the syrup through a fine-mesh sieve into a jar or bottle, discarding the cardamom pods and lemon zest.

  7. Let the syrup cool completely to room temperature before sealing and refrigerating.
