Cheese Rolls (Rakakat) offer a tasty Middle Eastern appetizer with a delightful blend of crispy filo pastry and a rich, cheesy filling. Whether served at gatherings or as a savory snack, these rolls boast a delightful texture contrast between gooey cheese and flaky pastry. The process involves preparing the cheese mixture, wrapping it in delicate filo sheets, and baking them until perfectly golden. This combination makes them a favorite among cheese lovers and pastry enthusiasts.

Ingredients

  • 1 package filo pastry sheets
  • 1 1/2 cups feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup parsley, chopped
  • 1/4 cup green onions, chopped

  3. Lay out one filo pastry sheet on a clean surface and brush it lightly with melted butter.
  4. Place a spoonful of the cheese mixture along the bottom edge of the pastry sheet.
  5. Fold the sides of the pastry over the filling, then roll it up into a tight log shape.
  6. Brush the top of the roll with more melted butter and place it on a baking sheet.
  7. Repeat with the remaining filo sheets and cheese mixture.
  8. Bake in the preheated oven for 15-20 minutes until the rolls are golden brown and crispy.
