  • 1/4 cup coconut oil, melted
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the cooked quinoa, almond flour, dried cherries, and chopped almonds until well combined.
  3. In another bowl, whisk the maple syrup, melted coconut oil, vanilla extract, baking powder, salt, and eggs until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until the batter is just combined.
  5. Spoon the batter evenly into each muffin cup, filling them about three-quarters full.
  6. Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
