Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts, cut into fry-shaped strips
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons milk
  • 1 1/2 cups panko breadcrumbs
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 4 cups vegetable oil, for frying
  • 1/2 cup ketchup

Method

  1. Slice chicken breasts into strips about 1/2 inch wide and 3 inches long, resembling thick fries.

  2. In a shallow bowl, whisk together the flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne.

  3. In a second bowl, whisk the eggs with the milk. Place the panko breadcrumbs in a third bowl.

  4. Dredge each chicken strip in the seasoned flour, dip into the egg mixture, then coat thoroughly in panko breadcrumbs, pressing to adhere.

  5. Heat the vegetable oil in a large heavy pot or deep skillet to 350°F.

  6. Fry the chicken strips in batches of 6 to 8, turning occasionally, until golden brown and cooked through, 5 to 6 minutes per batch.

  7. Transfer fried chicken fries to a paper towel-lined plate to drain excess oil.

  8. Serve hot with ketchup for dipping.
