Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1/3 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 stalks celery, finely diced
  • 2 tablespoons red onion, finely diced
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper, freshly ground
  • 8 slices sourdough bread
  • 8 slices Swiss cheese
  • 3 tablespoons butter, softened

Method

  1. In a medium bowl, combine the shredded chicken, mayonnaise, Dijon mustard, celery, red onion, lemon juice, salt, and pepper. Stir until evenly coated.

  2. Lay out 4 slices of bread. Place one slice of Swiss cheese on each, then top with the chicken mixture, dividing evenly.

  3. Top the chicken mixture with a second slice of Swiss cheese and cap with the remaining bread slices.

  4. Spread softened butter evenly over the outside of each sandwich, both top and bottom.

  5. Heat a 9-inch skillet over medium heat. Place one or two sandwiches in the skillet and cook until the bottom is golden brown, about 3 to 4 minutes.

  6. Flip the sandwiches and cook until the second side is golden brown and the cheese is fully melted, about 3 to 4 minutes.

  7. Transfer to a cutting board, let rest for 1 minute, then slice in half and serve warm.
