Ingredients
- 1 1/2 pounds boneless skinless chicken breasts, thinly sliced into 12 pieces
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 1/2 cups panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup olive oil
- 1 1/2 cups marinara sauce
- 8 ounces fresh mozzarella cheese, sliced
- 12 slider buns, split
- 3 tablespoons butter, melted
- 2 tablespoons chopped fresh basil
Method
-
Preheat the oven to 425°F. Line a baking sheet with parchment paper and set a wire rack on top, if available.
-
Set up a dredging station: place flour in one shallow dish, beaten eggs in a second, and combine panko, Parmesan, garlic powder, oregano, salt, and pepper in a third.
-
Dredge each chicken piece in flour, then egg, then press into the panko mixture to coat evenly on both sides.
-
Arrange the breaded chicken on the prepared baking sheet and drizzle or brush with olive oil.
-
Bake until golden and cooked through, 18 to 20 minutes, flipping halfway through.
-
Remove chicken from the oven and switch the oven to broil. Top each piece with a spoonful of marinara sauce and a slice of mozzarella.
-
Broil until the cheese is melted and bubbly, 2 to 3 minutes, watching closely to prevent burning.
-
Slice slider buns in half horizontally and brush the cut sides with melted butter.
-
Toast the buns cut-side up under the broiler for 1 to 2 minutes until lightly golden.
-
Place a piece of cheesy chicken on each bottom bun, sprinkle with chopped basil, and cap with the top bun.
-
Secure each slider with a toothpick if desired and serve warm.
