- 2 cups cooked shredded chicken
- 4 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/4 cup green onions, thinly sliced
- 1/4 cup diced red bell pepper
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 large flour tortillas (10-inch)
- 2 tablespoons vegetable oil
- 1/2 cup salsa, for serving
- 1/2 cup sour cream, for serving

In a large bowl, combine shredded chicken, softened cream cheese, cheddar, Monterey Jack, green onions, and diced red bell pepper.

Season the chicken mixture with cumin, chili powder, garlic powder, salt, and black pepper, and stir until evenly combined.

Lay a tortilla flat and spread about 1/3 cup of the chicken mixture evenly over the entire surface, leaving a small border at one edge.

Roll the tortilla tightly into a log and repeat with the remaining tortillas and filling.

Place the rolled tortillas seam-side down on a plate and chill for 10 minutes to help them hold their shape.

Slice each roll crosswise into 4 pinwheels using a sharp knife.
