  • 1.5 pounds boneless skinless chicken thighs

Method

  1. Heat the olive oil in a 6-quart stock pot over medium-high heat. Season the chicken thighs with a pinch of salt and pepper and sear for 3 to 4 minutes per side until golden brown.

  2. Remove the chicken to a plate and set aside. Add the onion, carrots, and celery to the pot and cook, stirring occasionally, until softened, about 6 minutes.

  3. Add the garlic and cook, stirring, until fragrant, about 1 minute.

  4. Return the chicken to the pot along with the potatoes, chicken stock, bay leaves, thyme, salt, and pepper. Bring to a boil, then reduce heat to low and simmer, covered, until the chicken is cooked through and potatoes are tender.
