This marinade blends chipotle peppers in adobo with lime juice, garlic, and warm spices to tenderize chicken while building smoky, tangy flavor. It works well on breasts, thighs, or drumsticks, and suits tacos, salads, or grilled dinners alike. A few hours of soaking is enough, though overnight resting deepens the flavor further.
Ingredients
- 3 canned chipotle peppers in adobo sauce
- 2 tablespoons adobo sauce from the can
- 1/3 cup olive oil
- 1/4 cup fresh lime juice
- 3 cloves garlic, minced
- 2 tablespoons honey
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup chopped fresh cilantro
Method
-
Combine the chipotle peppers, adobo sauce, olive oil, lime juice, garlic, honey, cumin, smoked paprika, oregano, salt, and black pepper in a blender or food processor.
-

-
Stir in the chopped cilantro by hand.
-
Pour the marinade over chicken in a resealable bag or shallow dish, turning to coat evenly.
-
