Place the chocolate bar flat-side down on a clean work surface. Holding a sharp vegetable peeler or chef's knife at a 45-degree angle, drag it firmly along the wide, flat surface of the bar in a single smooth motion to form a curl.

Let each curl fall gently onto a parchment-lined plate or tray; avoid touching the curls with warm fingers, as they soften and lose shape quickly.

Continue shaving curls from the bar, rotating or re-softening the chocolate as needed, until you have about 1 cup of curls.
