These fried dough pastries get their signature crackly crust from piping choux-like dough directly into hot oil, then rolling the hot churros in cinnamon sugar. A thick, rich chocolate dipping sauce on the side turns this classic Spanish and Mexican street food treat into a shareable dessert or weekend breakfast indulgence.

Ingredients

  • 1 cup water
  • 2 1/2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 4 cups vegetable oil, for frying
  • 1/2 cup granulated sugar, for coating
  • 1 1/2 teaspoons ground cinnamon
  • 1 cup chocolate dipping sauce

Method

  1. In a 2-quart saucepan, combine the water, 2 1/2 tablespoons sugar, salt, and butter. Bring to a boil over medium heat, stirring until the butter melts.

  2. Remove from heat and add the flour all at once, stirring vigorously with a wooden spoon until the mixture forms a smooth ball and pulls away from the sides of the pan.

  3. Let the dough cool for 5 minutes, then beat in the eggs one at a time, mixing well after each addition until the dough is smooth and glossy. Stir in the vanilla extract.

  4. Transfer the dough to a piping bag fitted with a large star tip.

  5. In a 6-quart saucepan or deep skillet, heat the vegetable oil to 360°F over medium heat.

  6. Pipe 4-inch strips of dough directly into the hot oil, cutting each strip free with scissors or a knife, frying 3 to 4 churros at a time.

  7. Fry the churros, turning occasionally, until deep golden brown and crisp on all sides, about 2 to 3 minutes per batch.

  8. Remove churros with a slotted spoon or tongs and drain briefly on a paper towel-lined plate.

  9. In a shallow dish, stir together the 1/2 cup sugar and cinnamon. Roll the warm churros in the cinnamon sugar until evenly coated.

  10. Warm the chocolate dipping sauce gently if needed, then transfer to small bowls. Serve churros warm alongside the chocolate sauce for dipping.
