Ingredients
- 1 1/2 cups long-grain white rice
- 2 cups water
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/3 cup fresh cilantro, chopped
- 3 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 1 clove garlic, minced

Rinse the rice in a fine-mesh strainer under cold water until the water runs mostly clear, then drain well.

In a medium saucepan, heat the olive oil over medium heat and add the minced garlic, stirring for about 30 seconds until fragrant.

Add the rinsed rice, water, and salt to the saucepan and bring to a boil over high heat.

Reduce heat to low, cover tightly, and simmer until the rice is tender and the water is absorbed.
