- 6 tablespoons unsalted butter, melted and cooled
- 2 cups dark rye flour
- 2 cups all-purpose flour, plus more as needed
- 1 1/4 teaspoons salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 2 tablespoons ground cinnamon
- 1 cup powdered sugar
- 2 tablespoons whole milk
- 1/2 teaspoon vanilla extract

In the bowl of a stand mixer, whisk together the warm milk, yeast, and granulated sugar. Let stand until foamy.

Whisk the eggs and melted butter into the yeast mixture.

Add the rye flour, 1 1/2 cups of the all-purpose flour, and salt. Mix with the dough hook on low speed until a shaggy dough forms, then knead on medium speed, adding remaining flour as needed, until smooth and slightly sticky, about 8 minutes.

Shape the dough into a ball, place in a greased bowl, cover, and let rise in a warm spot until doubled in size.

Stir together the brown sugar and cinnamon in a small bowl for the filling.
