- 6 apples, peeled, cored, and cut into 1-inch chunks
- 3 tablespoons unsalted butter
- 1/3 cup brown sugar, packed
- 1 1/2 teaspoons ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/3 cup water
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract

Add the apples, brown sugar, cinnamon, nutmeg, salt, and water. Stir to coat the apples evenly.

Bring to a simmer, then reduce heat to low, cover, and cook, stirring occasionally, until the apples are tender but still holding their shape, about 15 minutes.
