This marinade pairs fresh orange and lemon juice with garlic, herbs, and olive oil to tenderize and flavor meats, poultry, or seafood. The acidity brightens rich proteins while the oil carries herbal flavor deep into the surface, making it a versatile base for grilling, roasting, or pan-searing.

Ingredients

  • 1/2 cup fresh orange juice
  • 1/4 cup fresh lemon juice
  • 1/2 cup olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon orange zest
  • 1 teaspoon lemon zest
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon red pepper flakes

Method

  1. Zest the orange and lemon before juicing them, then set the zest aside.

  2. In a medium bowl, whisk together the orange juice, lemon juice, and olive oil.

  3. Add the minced garlic, parsley, thyme, rosemary, orange zest, and lemon zest, and whisk to combine.

  4. Season with kosher salt, black pepper, and red pepper flakes, and whisk once more to blend.

  5. Use immediately to marinate meat, poultry, fish, or vegetables, or transfer to a jar and refrigerate until ready to use.
