- 1 1/2 cups gluten-free all-purpose flour blend
- 1/2 cup almond flour
- 1 teaspoon xanthan gum (omit if flour blend already contains it)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 cup hazelnuts, toasted and roughly chopped
- 1 tablespoon orange zest

Preheat the oven to 350°F. Line a baking sheet with parchment paper.

Spread the hazelnuts on a baking sheet and toast in the oven for 8 to 10 minutes, until fragrant and skins begin to crack. Let cool slightly, then rub off skins and roughly chop.

In a medium bowl, whisk together the gluten-free flour blend, almond flour, xanthan gum, baking powder, and salt.

In a large bowl, beat the sugar and eggs together until pale and slightly thickened, about 2 minutes. Beat in the vanilla and almond extracts.

Add the dry ingredients to the egg mixture and stir until a thick, sticky dough forms. Fold in the chopped hazelnuts and orange zest.

With damp hands, divide the dough in half and shape each portion into a log about 10 inches long and 2 1/2 inches wide on the prepared baking sheet, spacing them apart.

Arrange the slices cut-side down on the baking sheet and bake for 10 minutes. Flip each slice and bake another 8 to 10 minutes, until dry and golden at the edges.
