Achieving a light, airy sponge is key to success, along with the harmonious sweetness from the jam and cream (feel free to go store-bought where appropriate). Baker’s note: This recipe makes two layers, so if you want a taller Victoria Sponge Cake, increase all the ingredients by 1.5× (or make 1½ batches of the recipe) for three layers, and simply double the recipe for four.
Ingredients
- 1 cup butter, softened
- 1 cup sugar
- 4 medium eggs
- 2 tbsp milk
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 cup whipped cream, for filling (store-bought works fine)
- 1/2 cup jam, for filling
- Powdered sugar, for dusting
Instructions
- Preheat the oven to 350°F (180°C). Grease and line two 8-inch round cake pans.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs, one at a time, beating well after each addition.
- Add the milk and vanilla, and mix well.
- Sift in the flour and baking powder, then gently fold into the batter until just combined.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 20-25 minutes or until the cakes are golden and spring back when touched.
- Allow the cakes to cool in the pans for 5 minutes, then transfer to a wire rack to cool completely.
- Once cooled, spread the whipped cream over one cake layer, then top with the jam.
- Place the other cake layer on top and gently press down.
- Serve the cake with a dusting of powdered sugar.
