Ingredients
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 3 eggs
- 2 teaspoons vanilla extract
- 1 cup buttermilk
- 1 cup light brown sugar, packed
- 2 tablespoons ground cinnamon
- 1 cup walnuts, chopped
- 3/4 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 cup powdered sugar
- 2 tablespoons milk
Method
-
Preheat the oven to 350°F. Grease and flour a 10-inch tube pan.
-
In a medium bowl, whisk together 2 1/2 cups flour, baking powder, baking soda, and salt.
-
In a small bowl, combine the brown sugar, cinnamon, and chopped walnuts to make the streusel filling. Set aside.
-
In a separate small bowl, mix the 3/4 cup flour and 1/2 cup granulated sugar with the melted butter until crumbly to make the crumb topping. Set aside.
-
In a large bowl, beat the softened butter and 1 1/2 cups granulated sugar together until light and fluffy, about 3 minutes.
-
Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
-
Add the flour mixture to the butter mixture in three additions, alternating with the buttermilk in two additions, beginning and ending with the flour. Mix just until combined.
-
Spread half of the batter evenly into the prepared pan. Sprinkle evenly with the cinnamon-walnut streusel filling.
-
Spread the remaining batter over the streusel layer, smoothing the top with a spatula.
-
Sprinkle the crumb topping evenly over the batter.
-
Bake until a toothpick inserted into the center comes out clean, 50 to 55 minutes.
-
Cool the cake in the pan for 20 minutes, then invert onto a wire rack to cool completely.
-
Whisk together the powdered sugar and milk until smooth, then drizzle over the cooled cake before slicing.
