- 2 cups dried yellow split peas, rinsed and sorted
- 6 cups water
- 1 teaspoon salt
- 1 bay leaf
- 1/2 small yellow onion, peeled and halved
- 1 tablespoon unsalted butter or olive oil
- 1/4 teaspoon ground black pepper

Rinse the yellow split peas in a colander under cold water, picking out any debris or shriveled peas.

Combine the split peas, water, salt, bay leaf, and onion halves in a 6-quart saucepan.

Bring to a boil over high heat, then skim off any foam that rises to the surface.

Reduce the heat to low, cover partially, and simmer, stirring occasionally, until the peas are tender and starting to break down, 40 to 50 minutes.

Remove and discard the bay leaf and onion halves.

Stir in the butter and black pepper, mashing some of the peas against the side of the pan for a creamier texture if desired.

Taste and adjust salt and pepper, then serve warm or use as a base for soup.
