This blend combines cayenne, paprika, and mustard seed with plenty of salt to deliver the bold, briny punch a proper crawfish boil needs. Mix it ahead so it's ready to dump straight into the pot with your crawfish, corn, and potatoes. It also doubles as a dry rub for shrimp or crab boils.

Ingredients

  • 1/2 cup cayenne pepper
  • 1/4 cup smoked paprika
  • 1/4 cup coarse sea salt
  • 2 tablespoons mustard seed
  • 2 tablespoons whole black peppercorns
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1 tablespoon celery seed
  • 1 tablespoon ground coriander
  • 1 tablespoon whole cloves
  • 2 teaspoons ground cumin
  • 2 teaspoons dried thyme
  • 2 teaspoons cayenne, extra for heat adjustment
  • 4 bay leaves, crumbled
  • 1 teaspoon ground allspice

Method

  1. In a medium bowl, combine the cayenne pepper, smoked paprika, and coarse sea salt.

  2. Add the mustard seed, peppercorns, garlic powder, onion powder, celery seed, coriander, cloves, cumin, thyme, extra cayenne, crumbled bay leaves, and allspice.

  3. Whisk or stir the mixture thoroughly until all the spices are evenly distributed.

  4. Transfer the seasoning to an airtight jar or container, pressing out any air pockets.

  5. Store in a cool, dark pantry for up to 6 months, shaking before each use to redistribute settled spices.
