Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 can coconut milk
  • 2 tbsp curry powder

  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tbsp vegetable oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 inch piece ginger, grated
  • 1 cup peas
  • 1 tbsp lime juice
  • 2 tbsp fresh cilantro, chopped

Instructions

  1. Heat 1 tbsp of vegetable oil in a large skillet over medium heat.
  2. Add 1 medium chopped onion, 3 minced cloves of garlic, and 1 inch piece of grated ginger. Cook until onions are soft, about 5 minutes.
  3. Stir in 2 tbsp of curry powder, 1 tsp of turmeric, 1 tsp of cumin, and 1 tsp of paprika until combined and fragrant, about 1 minute.
  4. Add 1 lb of peeled and deveined shrimp to the skillet. Cook until they turn pink, about 2-3 minutes.
  5. Pour in 1 can of coconut milk and 1 cup of peas. Simmer for 5-7 minutes until shrimp is cooked through and sauce thickens slightly.
  6. Stir in 1 tbsp of lime juice. Adjust seasoning with salt and pepper as needed.
  7. Garnish with 2 tbsp of chopped fresh cilantro before serving.
  8. Serve hot over rice or with naan bread.
