Ingredients

  • 8 cups water
  • 4 stalks lemongrass, trimmed and bruised
  • 6 green tea bags
  • 1 tablespoon fresh ginger, thinly sliced
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons honey
  • 1 lemon, thinly sliced, for garnish
  • 1/4 cup fresh mint leaves, for garnish

Method

  1. Trim the lemongrass stalks, remove the tough outer layers, and bruise them with the back of a knife to release their aroma. Cut each stalk into 3-inch pieces.

  2. In a 6-quart saucepan, combine the water, lemongrass, and ginger slices. Bring to a boil over high heat.

  3. Reduce heat and simmer gently to infuse the lemongrass and ginger flavors into the water.

  4. Remove the saucepan from heat and add the green tea bags. Steep, then remove the tea bags to avoid bitterness.

  5. Strain the infusion through a fine-mesh sieve into a heatproof pitcher, discarding the lemongrass and ginger solids.

  6. Stir in the honey and lemon juice until fully dissolved.

  7. Serve warm in mugs, or refrigerate and serve over ice. Garnish each serving with a lemon slice and fresh mint leaves.
