Ingredients

  • 1 medium eggplant, sliced
  • 2 Tbsp olive oil
  • 1 clove garlic, minced
  • 1 cup cherry tomatoes, halved

  • 2 Tbsp balsamic glaze
  • salt, to taste
  • pepper, to taste
  • 1 whole baguette, sliced and toasted

Instructions

  1. Preheat the grill to medium-high heat, around 375°F (190°C).
  2. Brush the eggplant slices with olive oil and lightly season with salt and pepper.
  3. Grill the eggplant for 2 to 3 minutes per side until tender. Remove from the grill and set aside to cool slightly.
  4. In a bowl, mix cherry tomatoes, garlic, basil, and balsamic glaze. Adjust seasoning with salt and pepper.
  5. Place a grilled eggplant slice on each toasted baguette slice, then top with a spoonful of the tomato mixture.
  6. Drizzle with additional balsamic glaze before serving immediately.
