Farofa is a Brazilian side dish made by toasting manioc flour with bacon, onion, and butter until golden and fragrant. It adds a crunchy, savory contrast to rice, beans, and grilled meats, and is a staple at Brazilian barbecues and holiday tables.

Ingredients

  • 4 ounces bacon, diced
  • 3 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups manioc flour (farinha de mandioca)
  • 3 tablespoons sliced green onion
  • 1/2 teaspoon salt
  • 0 black pepper, to taste

Method

  1. In a 9-inch skillet over medium heat, cook the diced bacon, stirring occasionally, until crisp and browned, about 6 minutes.

  2. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.

  3. Add the butter to the skillet and let it melt into the bacon fat.

  4. Add the chopped onion and cook, stirring occasionally, until softened and translucent, about 4 minutes.

  5. Stir in the minced garlic and cook until fragrant, about 30 seconds.

  6. Return the bacon to the skillet, then gradually sprinkle in the manioc flour, stirring constantly to coat it evenly in the fat.

  7. Continue toasting the flour mixture over medium-low heat, stirring constantly, until golden and fragrant, about 5 minutes.

  8. Remove from heat and stir in the sliced green onion, salt, and black pepper to taste.

  9. Transfer to a serving bowl and serve warm alongside rice, beans, or grilled meats.
