This dressing balances sweet paprika, tangy vinegar, and rich oil into a smooth, pourable emulsion with a coral hue. Whisked or blended until thickened, it coats crisp lettuce and vegetables without overpowering them. Serve it on wedge salads or as a dip for raw vegetables.
Ingredients
- 1/2 cup vegetable oil
- 1/4 cup ketchup
- 1/4 cup apple cider vinegar
- 1/4 cup granulated sugar
- 1 tablespoon finely grated onion
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon dry mustard
- 1/4 teaspoon garlic powder
- 1/8 teaspoon freshly ground black pepper
Method
-
In a medium bowl or blender, combine the ketchup, apple cider vinegar, sugar, grated onion, paprika, salt, dry mustard, garlic powder, and black pepper.
-
Whisk or blend the mixture until the sugar dissolves and the ingredients are smooth.
-
While whisking constantly (or with the blender running on low), slowly drizzle in the vegetable oil in a thin stream until the dressing thickens and emulsifies.
-
Taste and adjust salt, sugar, or vinegar as needed.
-
Transfer the dressing to a jar or airtight container and refrigerate for at least 30 minutes to let the flavors meld before serving.
-
Shake or whisk well before serving, as the dressing may separate slightly on standing.
