  • 1 cup strawberries, hulled and diced
  • 1 cup kiwi, peeled and diced
  • 1 cup mango, peeled and diced
  • 1 cup pineapple, diced
  • 1 kiwi, peeled and diced (extra for color, optional)
  • 1 jalapeño, seeded and minced (optional)
  • 2 tablespoons fresh mint, finely chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1/8 teaspoon salt

Method

  1. Dice the strawberries, kiwi, mango, and pineapple into small, uniform 1/4-inch pieces and place them in a large mixing bowl.

  2. Add the minced jalapeño (if using) and chopped mint to the bowl.

  3. In a small bowl, whisk together the lime juice, honey, and salt until the honey dissolves.

  4. Pour the lime juice mixture over the fruit and gently toss to combine, being careful not to mash the fruit.
