A fried egg is a quick breakfast staple cooked in butter or oil until the whites set and the edges turn golden and crisp. Cooking time and technique vary depending on whether you prefer a sunny-side up, basted, or over-easy finish. It pairs well with toast, breakfast potatoes, or atop a grain bowl.

Ingredients

  • 1 tablespoon butter
  • 2 large eggs
  • salt, to taste
  • black pepper, to taste

Method

  1. Crack the eggs into a small bowl or cup, being careful to keep the yolks intact.

  2. Heat a 9-inch nonstick skillet over medium-low heat and add the butter, swirling to coat the pan as it melts.

  3. Once the butter is foamy and the pan is hot, gently slide the eggs into the skillet, keeping yolks whole.

  4. Cook undisturbed until the whites are set around the edges but still glossy near the yolk, about 2 to 3 minutes.

  5. For sunny-side up, remove the eggs now; for basted eggs, spoon a little hot butter over the yolks and cook 30 seconds more; for over-easy, carefully flip and cook 30 seconds longer.

  6. Slide the eggs onto a plate, season with salt and black pepper, and serve immediately.
