Ingredients

  • 2 cans chickpeas, drained and liquid reserved (15 oz each)
  • 1/3 cup tahini
  • 3 tablespoons lemon juice, freshly squeezed
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons reserved chickpea liquid (aquafaba), or as needed
  • 1 tablespoon olive oil, for garnish
  • 1 teaspoon fresh parsley, chopped, for garnish

Method

  1. Add the chickpeas, tahini, lemon juice, and garlic to a food processor. Process for 1 minute until thick and grainy.

  2. With the food processor running, slowly drizzle in the olive oil.

  3. Add the parsley, dill, cumin, salt, and pepper. Process for 1 minute, scraping down the sides as needed.

  4. With the processor running, add the reserved chickpea liquid 1 tablespoon at a time until the hummus is smooth and creamy, about 2 minutes total.

  5. Taste and adjust seasoning with additional salt, pepper, or lemon juice as needed.

  6. Transfer the hummus to a serving bowl, swirl the top with the back of a spoon, and drizzle with olive oil. Garnish with chopped parsley before serving.
