Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup whole milk
  • 1/2 cup tonic water
  • 3 cups powdered sugar
  • 1/2 cup butter, softened
  • 2 tablespoons tonic water
  • few drops black food coloring

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Alternate adding the flour mixture and the whole milk, beginning and ending with the flour mixture, and mix until just combined.
  6. Stir in the tonic water to the batter.
  7. Spoon the batter evenly into the prepared cupcake liners, filling each about 2/3 full.
  8. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cupcakes cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. To make the frosting, beat the powdered sugar and softened butter together until smooth.
  11. Gradually add the tonic water and mix until you reach the desired consistency.
  12. Add a few drops of black food coloring and mix until fully incorporated.
  13. Frost the cooled cupcakes with the prepared glow-in-the-dark frosting.
  14. Place the cupcakes under a black light and watch them glow!
