Chia seeds swell overnight in matcha-infused milk to create a thick, pudding-like texture studded with tiny seeds. The earthy, slightly bitter green tea balances a touch of sweetness, making this a naturally gluten-free breakfast or snack. Serve chilled with fresh fruit or a drizzle of honey for added contrast.
Ingredients
- 2 cups unsweetened almond milk
- 1/2 cup chia seeds
- 2 teaspoons matcha green tea powder
- 3 tablespoons honey
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1 cup fresh berries, for topping
Method
-
In a medium bowl, whisk the matcha powder into about 1/4 cup of the almond milk until no clumps remain.
-
Add the remaining almond milk, honey, vanilla extract, and salt to the bowl and whisk until well combined.
-
Add the chia seeds and whisk thoroughly to distribute them evenly and prevent clumping.
-
Let the mixture sit at room temperature for 10 minutes, then whisk again to break up any settled chia seeds.
-
Cover the bowl and refrigerate for at least 4 hours, or overnight, until the mixture thickens to a pudding-like consistency.
-
Divide the pudding among four serving bowls or jars and top with fresh berries before serving.
