- 1/2 cup vegetable oil
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 teaspoon vanilla extract
- 2 cups shredded zucchini, excess moisture squeezed out
- 1/2 cup chopped walnuts, optional

In a large bowl, whisk the eggs, then add the vegetable oil, granulated sugar, brown sugar, and vanilla extract, whisking until smooth.
