Ingredients
- 1/2 cup toasted sesame paste (or tahini)
- 3 tablespoons soy sauce
- 3 tablespoons rice vinegar
- 2 tablespoons sugar
- 2 tablespoons toasted sesame oil
- 1/4 cup water
- 1 tablespoon mirin
- 1 teaspoon garlic, grated
- 1 teaspoon ginger, grated
- 1 tablespoon toasted white sesame seeds

In a medium bowl, whisk together the toasted sesame paste and soy sauce until smooth and fully combined.

Whisk in the rice vinegar, sugar, sesame oil, and mirin until the sugar dissolves and the mixture is smooth.

Stir in the grated garlic and ginger.

Add the water a tablespoon at a time, whisking until the sauce reaches a thick, pourable consistency.
