These madeleines pair the classic buttery sponge with vibrant matcha for a slightly bitter, grassy contrast to the sweetness. The batter rests before baking, which helps form the signature domed hump. Serve with tea for an afternoon treat or dust with powdered sugar for a simple dessert.

Ingredients

  • 2 large eggs
  • 2/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 2 tablespoons matcha green tea powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, melted and cooled, plus extra for greasing
  • 1 tablespoon honey
  • 1 tablespoon powdered sugar, for dusting

Method

  1. In a large bowl, whisk the eggs and granulated sugar together until pale and slightly thickened, about 2 minutes.

  2. Whisk in the vanilla extract and honey until combined.

  3. Sift the flour, matcha powder, baking powder, and salt together over the egg mixture.

  4. Fold the dry ingredients into the egg mixture with a spatula until just combined and no streaks of flour remain.

  5. Fold in the melted butter in three additions until the batter is smooth and glossy.

  6. Cover the bowl with plastic wrap and refrigerate the batter for at least 1 hour, or up to overnight.

  7. Preheat the oven to 400F. Brush a 12-cavity madeleine pan generously with melted butter, then dust lightly with flour, tapping out the excess.

  8. Spoon about 1 tablespoon of chilled batter into each madeleine mold, filling two-thirds full without spreading it to the edges.

  9. Bake until the madeleines spring back when touched and show a distinct domed hump, 9 to 11 minutes.

  10. Unmold the madeleines onto a wire rack immediately and let cool for 5 minutes.

  11. Wipe out the pan, re-butter and re-flour it, and repeat with the remaining batter to bake a second batch.

  12. Dust the cooled madeleines lightly with powdered sugar before serving.
