Ingredients
- 2 fresh Anaheim or poblano chiles
- 1 1/2 pounds ground beef (80/20)
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper, freshly ground
- 1/2 teaspoon garlic powder
- 4 slices pepper jack cheese
- 4 hamburger buns, split
- 2 tablespoons unsalted butter, softened
- 4 leaves lettuce
- 4 slices tomato
- 1/4 cup mayonnaise
Method
-
Preheat the grill to high heat for direct grilling.
-
Transfer the charred chiles to a bowl, cover tightly with plastic wrap, and let steam for 10 minutes to loosen the skins.
-
Peel the skins from the chiles, remove the stems and seeds, and slice the flesh into strips.
-
In a large bowl, gently mix the ground beef with the salt, pepper, and garlic powder, being careful not to overwork the meat.
-
Divide the beef into 4 equal portions and shape into patties about 3/4-inch thick, pressing a slight dimple in the center of each.
-
Place the patties on the grill over direct high heat and cook 4 minutes without moving them.
-
Flip the patties and grill 3 to 4 minutes more, until an internal temperature of 160°F is reached.
-
Top each patty with a slice of pepper jack cheese and a few strips of roasted green chile, then close the grill lid for 1 minute to melt the cheese.
-
Butter the cut sides of the buns and toast them face-down on the grill until golden, about 1 minute.
-
Spread mayonnaise on the bottom buns, then layer lettuce, tomato, and the cheesy green chile patties. Close the burgers and serve immediately.
