Firm mahi-mahi fillets are marinated briefly in citrus and olive oil, then seared over high heat for a charred crust and moist interior. A quick technique well suited to weeknight dinners or warm-weather cookouts, finished with a squeeze of fresh lime.

Ingredients

  • 4 mahi-mahi fillets, about 6 ounces each
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 lime, cut into wedges, for serving
  • 2 tablespoons fresh parsley, chopped, for garnish

Method

  1. Pat the mahi-mahi fillets dry with paper towels and place them in a shallow dish.

  2. In a small bowl, whisk together the olive oil, lime juice, minced garlic, smoked paprika, salt, and pepper.

  3. Pour the marinade over the fillets, turning to coat evenly. Cover and refrigerate for 15 to 20 minutes.

  4. Preheat a grill or grill pan to medium-high heat, about 400°F, and lightly oil the grates.

  5. Remove the fillets from the marinade, letting excess drip off, and place them on the grill.

  6. Grill the fillets for 4 to 5 minutes per side, until opaque throughout and the flesh flakes easily with a fork.

  7. Transfer the fillets to a platter and let rest for 2 minutes.

  8. Garnish with chopped parsley and serve with lime wedges.
