Thick-cut onion rounds pick up smoky char marks and turn soft and sweet when grilled over direct heat. They make a simple topping for burgers and steaks or a side for grilled chicken, and the whole process takes well under thirty minutes.

Ingredients

  • 4 large yellow onions, peeled and cut into 1/2-inch thick rounds
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon garlic powder

Method

  1. Preheat the grill to medium-high heat, about 400 to 450°F, and clean the grates well.

  2. Thread onion rounds onto skewers through the sides if desired, or leave them whole to keep rings intact while grilling.

  3. Brush both sides of each onion slice with olive oil, then season evenly with salt, pepper, and garlic powder.

  4. Place the onion slices directly on the grill grates over direct heat.

  5. Grill undisturbed until the bottoms are well charred with grill marks, about 5 minutes.

  6. Flip the onion slices carefully with a spatula and grill the second side until charred and the onions are tender when pierced with a fork, about 5 minutes.

  7. Transfer the grilled onions to a platter and let rest for 5 minutes before separating into rings or serving whole.
