Ingredients

  • 4 cups water
  • 1/3 cup miso paste
  • 1 cup silken tofu, cubed
  • 1/4 cup wakame seaweed
  • 2 green onions, sliced
  • 1 sheet of nori, torn into small pieces

Instructions

  1. In a 6-quart saucepan, bring 4 cups of water to a gentle simmer.
  2. Add the wakame seaweed to the simmering water and let it rehydrate for about 3 minutes.
  3. In a small bowl, make a smooth paste by mixing the miso paste with a small amount of warm water.
  4. Stir the miso paste into the saucepan and ensure it is fully dissolved, but do not let the water boil after adding miso.
  5. Add the cubed silken tofu and gently heat through for 2-3 minutes.
  6. Stir in the torn pieces of nori and let them submerge and slightly soften in the soup.
  7. Ladle the soup into bowls and garnish with sliced green onions before serving.
