This glaze simmers honey, bourbon, and brown sugar down to a glossy, spoon-coating consistency with a hint of garlic and soy for depth. It brushes beautifully onto grilled chicken, salmon, pork chops, or roasted vegetables, and keeps well in the fridge for quick weeknight dinners.

Ingredients

  • 3/4 cup honey
  • 1/2 cup bourbon
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Method

  1. In a 6-quart saucepan, combine the honey, bourbon, soy sauce, brown sugar, butter, minced garlic, vinegar, smoked paprika, and black pepper.

  2. Bring the mixture to a simmer over medium heat, stirring occasionally to dissolve the sugar and melt the butter.

  3. Reduce heat to medium-low and simmer, stirring occasionally, until the mixture reduces slightly and smells fragrant.

  4. In a small bowl, whisk the cornstarch and water together until smooth to make a slurry.

  5. Whisk the cornstarch slurry into the simmering glaze and cook until thickened and glossy, enough to coat the back of a spoon.

  6. Remove from heat and let cool for 10 minutes before brushing onto grilled or roasted meats, or transfer to a jar for storage.
