Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar

  • 1/2 teaspoon ground ginger

  • 1 red bell pepper, cut into 1-inch pieces

Method

  1. In a medium bowl, whisk together the honey, soy sauce, minced garlic, rice vinegar, sesame oil, ground ginger, and black pepper.

  2. Set aside 1/4 cup of the honey garlic mixture in a separate container to use for basting later. Add the chicken cubes to the remaining marinade, toss to coat, cover, and refrigerate.

  3. If using wooden skewers, soak 8 skewers in water for 20 minutes to prevent burning.

  4. Preheat a grill or grill pan to medium-high heat and brush the grates with vegetable oil.

  5. Thread the marinated chicken onto the skewers, alternating with pieces of red bell pepper and red onion. Discard the used marinade.
