This marinade combines honey, garlic, and soy sauce into a glossy blend that tenderizes chicken, pork, or salmon while building deep savory-sweet flavor. A splash of rice vinegar and sesame oil rounds out the profile, making it suited for weeknight dinners or weekend grilling. Use it as a soak before cooking, then simmer any extra into a glaze.
Ingredients
- 1/2 cup honey
- 1/2 cup soy sauce
- 1/4 cup rice vinegar
- 2 tablespoons vegetable oil
- 1 teaspoon toasted sesame oil
- 6 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1/2 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes
Method
-
In a medium bowl, whisk together the honey, soy sauce, rice vinegar, vegetable oil, and sesame oil until well combined.
-
Add the minced garlic, grated ginger, black pepper, and red pepper flakes, and whisk again to evenly distribute.
-
Reserve 1/4 cup of the marinade in a separate container to use later as a glaze, keeping it free of raw meat contact.
-
Pour the remaining marinade over chicken, pork, or salmon in a resealable bag or shallow dish, turning to coat evenly.
-
Cover and refrigerate to marinate, letting the flavors penetrate the meat.
-
When ready to cook, remove the meat from the marinade and discard the used marinade. Cook the meat as desired (grilling, baking, or pan-searing).
-
While the meat cooks, pour the reserved 1/4 cup marinade into a small saucepan and simmer over medium heat until slightly thickened, stirring occasionally.
-
Brush or drizzle the simmered glaze over the cooked meat just before serving.
