This glaze balances honey's sweetness with sriracha's tangy heat, thickened into a glossy coating with a touch of garlic and soy. Simmer it in a small saucepan until it reduces slightly and clings to a spoon, then brush it onto grilled or roasted proteins in the last few minutes of cooking. It works equally well as a finishing sauce or a dipping condiment.
Ingredients
- 3/4 cup honey
- 1/3 cup sriracha sauce
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 2 tablespoons unsalted butter
- 1 tablespoon cornstarch
- 1 tablespoon water
Method
-
In a small saucepan, whisk together the honey, sriracha, soy sauce, rice vinegar, garlic, and ginger.
-
In a small bowl, stir the cornstarch and water together until smooth to make a slurry.
-
Bring the saucepan mixture to a simmer over medium heat, stirring occasionally.
-
Whisk in the cornstarch slurry and simmer, stirring frequently, until the glaze thickens and coats a spoon.
-
Remove from heat and whisk in the butter until melted and the glaze is glossy.
-
Let the glaze cool for 5 minutes before brushing onto grilled or roasted foods, or transfer to a jar for dipping.
