This marinade blends soy sauce, brown sugar, sesame oil, and grated pear to deliver the salty-sweet depth typical of Korean barbecue. The pear's natural enzymes help tenderize thinly sliced beef or pork, while garlic, ginger, and scallion round out the flavor. Use it for bulgogi, galbi, or grilled chicken thighs.

Ingredients

  • 1/2 cup soy sauce
  • 1/4 cup brown sugar, packed
  • 1/2 cup Asian pear, peeled and grated
  • 2 tablespoons sesame oil
  • 5 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 scallions, thinly sliced
  • 1 tablespoon rice wine
  • 1 tablespoon toasted sesame seeds
  • 1/2 teaspoon black pepper

Method

  1. Peel and grate the Asian pear, then mince the garlic and grate the ginger.

  2. In a medium bowl, whisk together the soy sauce, brown sugar, grated pear, sesame oil, garlic, ginger, scallions, rice wine, sesame seeds, and black pepper until the sugar dissolves.

  3. Use immediately to marinate meat, or transfer to a jar and refrigerate for up to 1 week.
