Ingredients

  • 2 cups raw honey
  • 2 tablespoons dried culinary lavender buds

  1. Pour the honey into a small saucepan and warm over low heat until it becomes thin and pourable, about 3 minutes.

  2. Stir in the dried lavender buds, making sure they are fully submerged in the honey.

  3. Reduce heat to the lowest setting and let the lavender steep in the warm honey for 10 minutes, stirring occasionally and watching closely so the honey does not scorch.

  4. Remove the pan from heat and let the honey sit at room temperature for 30 minutes to deepen the floral flavor.

  5. Pour the honey through a fine mesh strainer into a clean jar, pressing the lavender buds lightly with a spoon to extract the remaining honey, then discard the spent buds.

  6. Seal the jar and store at room temperature, stirring or tasting after a day to confirm the lavender flavor has reached the desired strength.
