Boneless chicken breasts marinate in a quick lemon and herb mixture before hitting the grill for a smoky, tender finish. The marinade doubles as a flavor base, keeping the chicken moist while developing light char on the outside. It's a straightforward weeknight dinner that pairs well with vegetables, rice, or a simple salad.
Ingredients
- 4 boneless skinless chicken breasts
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 1 teaspoon lemon zest
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme leaves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, sliced for garnish
Method
-
In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, salt, and pepper.
-
Place the chicken breasts in a shallow dish or resealable bag and pour the marinade over them, turning to coat evenly.
-
Cover and refrigerate to marinate, turning once halfway through.
-
Preheat the grill to medium-high heat, about 400°F, and lightly oil the grates.
-
Remove the chicken from the marinade, letting excess drip off, and discard the remaining marinade.
-
Grill the chicken breasts for 6 minutes on the first side, until well marked.
-
Flip and grill for another 5 to 6 minutes, until the internal temperature reaches 165°F.
-
Transfer the chicken to a plate and let rest for 5 minutes before serving, garnished with fresh lemon slices.
