These lemon Jell-O cubes are a simple set-and-forget treat with a bright citrus flavor and bouncy texture. Boiling water dissolves the gelatin quickly, while chilling time firms it into clean, cuttable squares. They work well as a light snack, a kids' party treat, or a palate-cleansing bite after a rich meal.

Ingredients

  • 6 ounces lemon gelatin powder (two 3-ounce boxes)
  • 2 cups boiling water
  • 1 cup cold water
  • 1 nonstick cooking spray, for greasing the pan

Method

  1. Lightly coat an 8x8-inch baking pan with nonstick cooking spray.

  2. Place the lemon gelatin powder in a large heatproof bowl.

  3. Pour the boiling water over the gelatin powder and whisk continuously until fully dissolved, about 2 minutes.

  4. Whisk in the cold water until evenly combined.

  5. Pour the mixture into the prepared pan, making sure the layer is level.

  6. Refrigerate uncovered until fully set and firm to the touch, at least 4 hours.

  7. Cut into 16 squares and lift out with a thin spatula to serve.
