Ingredients
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
- 1/3 cup coarse sugar, for rolling

Whisk together the flour, baking powder, baking soda, and salt in a medium bowl. Set aside.

In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3 minutes.

Beat in the egg, lemon zest, lemon juice, and vanilla extract until fully combined.

Add the flour mixture to the wet ingredients and mix on low speed until just combined into a soft dough.

Cover the dough and chill in the refrigerator until firm enough to roll into balls.

Preheat the oven to 350°F and line two baking sheets with parchment paper.

Scoop the dough into 1 1/2-tablespoon portions, roll into balls, then roll each ball in the coarse sugar to coat.

Place the dough balls on the prepared baking sheets, spacing them 2 inches apart, about 12 per sheet.
