- 1 1/2 cups brown lentils, rinsed and sorted
- 1 can diced tomatoes, 14.5 ounces
- 6 cups vegetable broth
- 1 teaspoon salt, plus more to taste
- 1/2 teaspoon black pepper
- 2 teaspoons red wine vinegar
- 2 tablespoons fresh parsley, chopped

Heat olive oil in a 6-quart saucepan over medium heat. Add onion, carrots, and celery, and cook until softened, about 7 minutes, stirring occasionally.
